Wolfgat, in the West Coast town of Paternoster was named the Best Restaurant in the World in Paris in February 2019.
The restaurant is in a revamped fisherman’s cottage with uninterrupted views of the beach, which is the source of much of the cuisine. Chef Kobus van der Merwe is a devoted forager drawing from the Standveld Fynbos plant kingdom for innovative ideas.
“Because we serve things that people often haven’t tasted before, such as indigenous succulents and herbs, those elements in the dishes are mostly served raw, or with minimal manipulation. Our kitchen is deliberately unindustrial. We like our dishes to showcase the unique ingredients.”
In keeping with his sustainability philosophy, the restaurant seats 20 people, to prevent the over-harvesting of ingredients that are sourced daily.
